This is an excellent hors d’oeuvre for a party big or small. If you can get a small production line going you’ll get them done quickly. I usually make my own balsamic vinaigrette but if you have a favorite by all means use it. Mom has given each of us one of those great salad dressing hand-held mixer dealies which are great for emulsifying oil and vinegar. Adjust ingredient amounts as necessary.
Ingredients:
1 box cherry tomatoes
1 container mozzarella cheese in water
1 package fresh basil
balsamic vinaigrette (1 part balsamic vinegar, 3 parts olive oil, salt, pepper, small spoonful brown sugar. Whisk or shake in covered container to emulsify)
Core out cherry tomatoes with a melon baller. If your tomatoes don’t stand up straight, cut a small piece off of the bottom to flatten. Slice mozzarella into pieces small enough to fit in hollowed out tomato. Slice basil leaves into 1/3 inch wide strips and stuff alongside mozzarella. Make them look pretty by having a little piece of each sticking out of the top of the tomato. Drizzle with the balsamic vinaigrette.
